Militant Foodie has been a busy-busy-busy butterfly. There were a string of occasions warranting a “Covered Dish” that could feed guests who have special dietary restrictions. This week, Militant Foodie brought food to an engagement party, a wedding, a birth, and a funeral.
Luckily, we already have an excellent assortment of tried-and-true recipes to conveniently pull from for such marathons!
I made some very successful alterations, as well as two brand-spanking-new recipes that I am glad to share!
AmbeR’s Veggie Chili for Everybody was once again a great success!
I served it with brown rice and corn chips for a Vegan who is allergic to soy and gluten.
I altered the Faux Tuna Salad to meet the restrictions of the Vegan with gluten and soy allergies.
Instead of using the “mayo says me” recipe, I used 1/3 cup raw cashews (soaked 4 hrs) and blended with 1 cup almond milk, 1 Tbs sesame oil, 1 Tbs Ume plum vinegar and 1 Tbs psyllium husks. I changed up the rest of the “salad” ingredients to 2 cans garbanzo beans (drained and skins removed), 1 cup chopped radish pickles, ½ cup chopped dill pickles, 1 sheet nori (crushed and crumbled). Once this was coarsely blended and combined, it was quite a treat on a GF cracker!
Kira’s Spicy Whole Wheat Chocolate Muffins adjusted to make them vegan, higher in fiber and lower in fat. (I tried a low carb, gluten free experiment with this recipe that went terribly awry. We will not call that version a success, but the photos are shocking enough to be entertaining). But the high fiber, low fat Vegan (and less hot) version was spectacular!
The instructions stay the same, but with these ingredients: ¾ cup rolled oats (blended until powdery fine), ¾ cup whole wheat flour, ½ cup cocoa powder, ¾ cup sugar, 1 tsp baking soda, 1 Tbs cinnamon, 1 Tbs chili powder, ½ tsp salt, 1 flax “egg” (2 Tbs flax meal + 4 Tbs water), ¼ cup unsweetened applesauce, ½ cup almond milk, ½ cup blended avocado, 1 Tbs lime juice, 1 tsp vanilla extract, 1 cup shredded zucchini, 1/3 cup cacao nibs
My Tropical Fruit Salad didn’t exactly reinvent the wheel, but it was damned tasty and people proclaimed to really enjoy it.
Recipe can easily be adjusted to make it vegan, lower the carbs or lower the fats.
Unicorn Head Nuggets! I took them to the Engagement Barbeque and even the meat-eater guests gobbled them up! Hooray for Unicorn Heads!
