This is a super easy solution to the “oh no! I don’t have any Vegan Mayonnaise!” problem that always seems to pop up at the most inconvenient times.
The kind of oil you chose to use makes a surprisingly big difference in the flavor of your mayo. The week we posted our Brown Bag Doesn’t Have to be Boring Blog, I used Mayo-Says-Me (sesame oil… get it?) for the Summer Salad Duo, and I used olive oil in the version for the Little Rubenesque Sandwiches.
12 oz firm silken tofu
5 Tbs healthy, good-for-you oil
2-3 Tbs lemon juice
½ tsp garlic salt
½ tsp onion powder
Blend all ingredients in food processor or blender until smooth and mayonnaise-y.
