AmbeR’s Shiitake Broth on September 24, 2015 3 Comments Ingredients: 15 oz dried shiitake mushroom caps ½ cup sea salt Water Instructions: In a large bowl/pot, cover mushrooms with water and allow to soak for 30 minutes-1 hour (you may need to set a plate or another bowl on top to keep the mushrooms submerged. Discard the soaking water. Bring 8 cups of fresh water and the salt to a simmer in a large pot. Remove the pot from heat. Add the mushrooms to the hot salt water (careful not to splash yourself!) Leave the pot covered for 30 minutes. Remove the Mushrooms from the pot, squeezing out the excess liquid. The remaining liquid is a tasty and salty broth/brine. *The Mushrooms have a lovely chewy, “meaty” quality and are a wonderful addition to many dishes.
