I recognize and accept that I am quite the active, energetic Squirrel; with seemingly boundless energy, enthusiasm, and a mischievous smirk. I am also quite “squirrely” when it comes to food… and my hyper-active-compulsion to collect and store it. My food dehydrator whirs for months on end. Almost all excess produce gets shredded or sliced, then tossed into the dehydrator. Once it is shriveled and moisture free, it gets stored in mason jars or other glass canisters for future use. My kitchen counters resemble that of a prodigious apothecary: a tantalizing collection of shining glass jars with mysterious and colorful contents.
It is a joy for me to get creative in the kitchen with the variety of materials I have at hand.
It is a nightmare to dictate instructions on how to duplicate the recipe, when one line might read something like: “combine pumpkin seed meal, dehydrated banana chips (ground into a fine powder), and dehydrated beet meal.”
I apologize in advance for how ridiculous you may find some of my recipes. Just know: during their creation I was smiling and singing like an animated-woodland-creature-in-love, and there was no malice intended.
These fruit and veggie power bars were inspired by my desire to interest my nephew in SOME food (ANY food) other than chicken-nuggets and french fries. Since they are missing all the added sugar, puffed rice and rolled oats that most store bought granola-type bars contain, these concoctions are a nutritional powerhouse. They also work great in formats other than standard “bar”, such as pie shells!
